Today I'll show you how I make these easy pita pizzas. They're easy and yummy!

Take four pita bread circles, cut them in half if they're not already cut, and place them on a parchment lined pizza pan.
Take a quarter cup of your favorite BBQ sauce...
...and drizzle over the pita halves.
Use the back of a spoon and spread the sauce around covering the pita but not going all the way to the edge.
Perfect.
To make this easy, I used canned chicken breast from my pantry. But if you have leftover chicken breast, cube it and you can use that. All you need is a quarter cup to divide among the pitas.
I sprinkled a quarter cup of chopped onion. Then I minced two garlic cloves and evenly sprinkled that over the pitas.
I had some red bell pepper in my crisper, so I minced that into a quarter cup and sprinkled it over the onion and minced garlic.
I used a 3/4 cup of mozzarella cheese for the final layer.
They were baked in a preheated 400 degree oven until the cheese melted - about 6 to 8 minutes.
Once they cool a bit, you can also use a pizza cutter and slice them into halves for easier finger snackin'.

Mini BBQ Pita Pizzas
Description
Quick and easy mini pizzas with a BBQ sauce base. A terrific way to use up pita bread. Yum!
Ingredients
- 4 Pita Rounds, Cut In Half
- ¼ cups BBQ Sauce
- ¼ cups Cooked, Cubed Chicken
- ¼ cups Onion, finely chopped
- ¼ cups Red Bell Pepper, Finely Chopped
- 2 cloves Garlic, Minced
- ¾ cups Mozzarella Cheese
Preparation
Preheat oven to 400 degrees F.Take four whole pita bread circles and cut them in half if they are not already cut. Place them on a parchment paper lined pizza pan. Take 1/4 cup of your favorite BBQ sauce and drizzle over the pita halves. Spread the sauce with the back of a spoon. Evenly top each pita half with the cubed chicken, onion, pepper, and minced garlic. Evenly top each pita with the cheese.
Bake until the cheese melts, about 6 to 8 minutes. Remove from oven and let cool slightly. Transfer to a serving plate.
