Mini BBQ Pita Pizzas

My, oh my goodness, it has been too long! Summer has flown by and we mostly grilled all summer or grazed on cheese and veggies with a glass of lemonade. I was going to show you how we do Beer Butt Chicken on the grill, but, um, it kind of got away from Steve (no, not the chicken, the flames). The chicken was good, but not worthy of a picture of its overly charred body. Another time then...

Today I'll show you how I make these easy pita pizzas. They're easy and yummy!

The printable recipe is here and will be at the end of this post.

Take four pita bread circles, cut them in half if they're not already cut, and place them on a parchment lined pizza pan.

Take a quarter cup of your favorite BBQ sauce...

...and drizzle over the pita halves.

Use the back of a spoon and spread the sauce around covering the pita but not going all the way to the edge.

Perfect.

To make this easy, I used canned chicken breast from my pantry. But if you have leftover chicken breast, cube it and you can use that. All you need is a quarter cup to divide among the pitas.

I sprinkled a quarter cup of chopped onion. Then I minced two garlic cloves and evenly sprinkled that over the pitas.

I had some red bell pepper in my crisper, so I minced that into a quarter cup and sprinkled it over the onion and minced garlic.

I used a 3/4 cup of mozzarella cheese for the final layer.

They were baked in a preheated 400 degree oven until the cheese melted - about 6 to 8 minutes.

Once they cool a bit, you can also use a pizza cutter and slice them into halves for easier finger snackin'.

Yum!
