Venison Shoulder Pot Roast


This one-pan venison pot roast recipe is ideal for those awkward shoulder roasts you don't want to throw away but you also don't feel like indulging in the tedious job of cleaning the roast for burger or jerky. Just make sure you seal the roast up good at processing time before placing them in the freezer, or cook one up right away after the harvest.

Cooking time is 4 hours and 15 minutes. It makes the whole cabin smell yummy!

Start with a large roasting pan. I like to use a large disposable roasting pan because I don't have a dishwasher back here in the woods. (Well, I do, actually. Two of them: Steve & Debi.)

Spray the pan with cooking spray.


Place your well-cleaned venison shoulder roast in the pan. When I say well-cleaned I'm talking about trimming as much gristle as possible from the roast to prevent that gamey taste.


Rub the roast with olive oil.


I used tomato chutney on this roast. Spread it over the roast. Tomato chutney is a cross between a tomato relish and salsa. It gives the recipe a little zing.


I used about 2 teaspoons.


Sprinkle on desired amount of salt and pepper.


And sprinkle on a teaspoon or two of smoked paprika.


I like smoked paprika.


Normally I would use a chopped medium onion at this point. However, my son was coming for the weekend and he doesn't care for onions. I wanted to keep the onion flavor but not the sight of onions so I used dried chopped onions instead.

Sneaky.



Now for the minced garlic. I buy my garlic in all varieties: fresh from the produce section, minced in a jar, or whole peeled cloves in a jar as seen above.


I minced 5 of them and tossed them over the roast.


Then I poured one and a half cups of beef broth around the roast.


I quartered one large tomato and placed that around the roast.


I added three sliced up stalks of celery.

Place the entire roasting pan in a preheated 400 degree F oven, uncovered, for 15 minutes then lower the heat to 325 degrees F and cover pan. Bake for 3 hours, basting occasionally with juices from the pan.




After three hours, add the potatoes and carrots. Blend 1/4 cup flour with 1/2 cup beef broth until creamy. Add to the roaster pan. Cover and bake one hour longer or until the vegetables are tender.

I don't have a picture of that step because it was dark outside. I don't use my flash when I photograph food so the picture wouldn't have turned out.

Here's the finished product! Have a piece of heavy buttered french bread ready on the side to dip in the juices! 

Note: This dish will serve 2-4 people depending on the size roast you are using.


 Venison Shoulder Pot Roast


Ingredients
  •  3-5 Pound Venison Bone-in Shoulder Roast
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Tomato Chutney
  • 1 teaspoon Smoked Paprika
  • Salt and Pepper, to taste
  •  Medium Onion, Chopped
  • 5 cloves Garlic, Chopped
  • 2 cups Beef Broth
  • 3 stalks Celery
  •  Large Tomato, Quartered
  • 1 pound Baby Carrots
  •  Medium Red Potatoes, Quartered
  • ¼ cups Flour

Preparation

Preheat the oven to 400 degrees F.

Place roast in a roasting pan prepared with nonstick cooking spray. Rub roast with the olive oil. Spread the tomato chutney over the roast then season with smoked paprika and desired salt and pepper. Cover the roast with the chopped onion and garlic. Pour in 1 & 1/2 cups of broth reserving 1/2 cup for later. Spread the tomato and celery around the roast. Bake, uncovered, for 15 minutes.

Turn the heat down to 325 degrees F. Cover the roasting pan. Bake for 3 hours. Baste the roast occasionally with juices from the roast and broth.

After 3 hours surround the roast with the potatoes and carrots. Combine the remaining 1/2 cup broth with the flour and blend until smooth. Add to the roaster. Cover and bake for 1 hour more or until the vegetables are tender.









Tumbleweed Venison Nachos


Last weekend I made BBQ Pulled Venison. Here's the recipe. So delicious and versatile! This week I used leftovers to make these yummy Nachos. We had something similar when we were in Kentucky but that version used pork. I used our favorite toppings and it turned out great. So easy!

First things first...chop up the first four ingredients and get your layers ready:

1/3 cup chopped lettuce
1/3 cup chopped tomato 
1/3 cup chopped Bell pepper (I used red this time because that's all I had in the house.)
1/3 cup chopped onion
1/3 cup sliced green olives
1/3 cup sliced jarred jalapenos
2 Tablespoons of your favorite BBQ sauce
1/3 cup BBQ Pulled Venison
2 cups shredded cheddar and monterey jack cheese
sour creme (optional)
salsa (optional)

The topping measurements were for the amount I wanted to make. If you're going with a bigger platter, go with more toppings of each, according to your taste. If you're going smaller, you might want to decrease the measurement to 1/4 cup, etc.

And you don't have to use my toppings. Get creative and own this recipe!

I figured tumbleweed was perfect in the title of this recipe because out west we see tumbleweeds fly erratically around the plains and with this recipe you can fly by the seat of your pants!

Change the red bell pepper to a yellow, orange, or green one.
Change the sliced green olives to sliced black olives.
Change the chopped sweet onion to a red onion.
Change the chopped iceberg lettuce to chopped romaine lettuce.
Change the BBQ Pulled Venison to BBQ Pulled Pork or cooked and cubed white chicken breast.

Use the toppings you and your family like and switch it up a bit!


This was the BBQ sauce I used. I'm not endorsing it in any way. It was something we picked up in Kentucky while visiting the Jim Beam Bourbon Distillery. It really is so good. It isn't tart like some sauces can be. It's more of a sweet smokey taste with a little kick. Perfect for this dish!


Grab yourself a platter...


Layer it with your favorite tortilla chips...


Grab your BBQ sauce...


and carefully drizzle it over the chips making sure each chip has a dab.


Now sprinkle your shredded BBQ Pulled Venison over the chips and sauce.


Here's where I goofed. I was having such a fun time with the layers, I forgot to snap a picture after I finished putting on the meat layer. I went right to the red peppers before I realized it! Oops!

So put on a layer of chopped peppers.


The lettuce...

After the meat goes on, you can put these layers on in any order you want.

But the cheese has to be last. 

Definitely. Last.


Chopped tomatoes...

I like to use Roma tomatoes because I use the fleshy outward firmer part to chop and save the runny insides for soup. I just toss them into a freezer bag and put them in the freezer for future use. No waste.

Sliced jalapenos out of the jar...


Now for the final layer - CHEESE!

I used a blended mixture of shredded monterey jack and cheddar cheese.


Cover it all up!


Put in the microwave and cook on high for 2 to 2 1/2 minutes. Watch it closely. Take it out when the cheese is just melted.




You can eat these babies with sour creme and salsa if you please, however, we eat them just as they are because there is so much flavor to savor!

Tumbleweed Venison Nachos

Ingredients

  • 1 bag Tortilla Chips
  • 2 Tablespoons Your Favorite BBQ Sauce
  • ⅓ cups Of My "BBQ Pulled Venison" Recipe (or More To Taste)
  • ⅓ cups Chopped Lettuce
  • ⅓ cups Chopped Tomato
  • ⅓ cups Chopped Bell Pepper
  • ⅓ cups Chopped Onion
  • ⅓ cups Sliced Green Olives
  • ⅓ cups Sliced Jarred Jalapenos
  • 2 cups Shredded Monterey Jack And Cheddar Cheese
  • Sour Creme And Salsa (optional)

Preparation

Chop up your veggies and set aside. Line a medium size platter with Tortilla chips. Sprinkle the BBQ sauce over the chips making sure each chip has a dab on it. Put a layer of the shredded venison over the sauce and chips. Now make a layer with each: the lettuce, tomatoes, peppers, onions, olives, and jalapenos. End with sprinkling the shredded cheese all over the platter.
Microwave for 2 to 2 1/2 minutes on high watching closely that you don’t overcook them. Take them out when the cheese has melted.
Serve alone or with sour creme and salsa. 

BBQ Pulled Venison


We keep the neck roasts of the deer we harvest and I used two of them in this delicious recipe. When processing a deer, trying to get the meat off a neck roast for grinding purposes can be time consuming. So I shrink wrap them whole and put them in the freezer. I love using this recipe because the cooked meat literally falls off the bones and is perfect alone or on sandwich rolls. And it makes the house smell oh-so-yummy. This recipe makes a large amount of pulled venison, 12 - 16 servings, but it disappears quickly at our house.

First you need about 4 pounds of venison roast and a large Dutch oven pot..

Brown roasts on all sides in 1 tablespoon of cooking oil.


In a separate large saucepan, saute chopped onions in 2 tablespoons of cooking oil until they are tender.


Add 1 cup ketchup, 1 cup beef broth, 2/3 cup chili sauce, 1/4 cup cider vinegar, 


1/4 cup packed brown sugar,


3 tablespoons Worcestershire sauce,


2 tablespoons mustard,


2 tablespoons molasses,


2 tablespoons lemon juice,


1 teaspoon salt,


1/4 teaspoon cayenne pepper, 1/8 teaspoon pepper, and then...

Drum roll please!


1 tablespoon liquid smoke.

A must!


Bring it all to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.


Carefully, pour the sauce over the venison roasts.


Cover, then pop it in a preheated 325 degree oven for 2 hours.


After 2 hours take it out of the oven...mmm....


and carefully turn the roasts over.

Cover, then return the pot to the oven for another 2 hours or until the meat is very tender. 

Take the roasts out of the pan and shred them on a baking sheet or in a cake pan. Discard the neck bones. Return the shredded meat to the sauce. Stir it up and serve on sandwich rolls of your choice.


Oh, so delicious on a cool, almost Fall day!


 BBQ Pulled Venison

  • 4 pounds Venison Roast
  • 3 Tablespoons Cooking Oil, Divided
  •  Large Onions, Chopped
  • 1 cup Ketchup
  • 1 cup Beef Broth
  • ⅔ cups Chili Sauce
  • ¼ cups Cider Vinegar
  • ¼ cups Brown Sugar, Packed
  • 3 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Mustard
  • 2 Tablespoons Molasses
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Salt
  • ¼ teaspoons Cayenne Pepper
  • ⅛ teaspoons Pepper
  • 1 Tablespoon Liquid Smoke
  • 16  Rolls Of Your Choice

Preparation


In a Dutch oven, brown roast(s) on all sides in 1 tablespoon oil. Set aside. Saute onions in a large saucepan with remaining oil until onions are tender. Add remaining ingredients except the rolls. Bring to a boil, uncovered, and reduce heat. Simmer for 15 minutes, stirring often. Pour contents in saucepan over the roast(s).

Cover Dutch oven and bake at 325 degrees F for 2 hours. Turn the roast over and bake for 2 more hours or until the roast is very tender. Remove roast and shred with a fork. Return the shredded venison to the sauce. Serve on rolls. Yield: 12-16 rolls
